ArtichokeFor me artichokes have always been in the ‘too hard basket'.

However since being in Italy, I have finally learnt how to prepare and cook with them and surprisingly they are pretty easy to do both! They also have an amazing earthy flavour and are fabulous in soups or stuffed!

Artichokes are also amazingly good for you!

  • Fibre - They are high in fibre which helps to lower cholesterol, prevention of colon cancer and diabetes.
  • Vitamin C  - A source of vitamin C which is an important antioxidant and a cofactor for collagen formation.
  • Iron - A non animal source of Iron which is necessary for oxygen transportation in the blood and utilisation of energy.
  • Potassium - A source of potassium which is an important for maintaining fluid and electrolyte balance.
  • Magnesium - A source of magnesium which supports bone mineralisation, normal muscle contraction and immune system function.
