Banana Pancakes

I really enjoy having pancakes as a breakfast treat sometimes, usually over the holidays when everyone is around to enjoy them! In fact this past Christmas I made my brother in law the classic pancake recipe because he had never had pancakes before!

However this is the version of pancakes that I usually make and is much healthier for you! What I love about this recipe is it only requires 3 ingredients and is ready to cook straight away, so they are a good recipe for a quick breakfast in the mornings! I find these pancakes to be really filling as well so they will definitely take you through until lunchtime. 

Banana Pancakes

I like to serve these with pancakes with some extra banana and a drizzle of honey, but you can also have them with a berry compote or your other favourite healthy toppings would work as well!

Banana Pancakes

Makes 4 pancakes

1 banana, plus extra for serving
1 egg
1/2 cup almond meal
pinch cinnamon (optional)
honey, for serving

These pancakes are best cooked slowly over low heat. Patience is a virtue with these pancakes! 

Peel and mash the banana with a fork in a bowl. Add the egg and whisk together. Add in the cinnamon and almond meal and whisk with the fork until smooth or there are no big lumps. 

Heat some butter in a frying pan over low heat. Add in 1/4 cup of batter and spread gently with a spatula, cook until bubbles start appearing on the surface of the batter. With the spatula flip the pancake gently and cook on the other side. 

Remove from the heat and place on a warmed plate. Repeat with remaining batter. 

Serve with some sliced banana and a drizzle of honey.
