quinoa granola

This quinoa granola is one of my motivations to get out of bed in the mornings, it is that yummy! You all know my love for breakfast by now, but this quinoa granola has taken it to a new level!

So what is so good about this granola? Firstly it tastes amazing! It’s nutty with a slightly sweet flavour from the honey, and the best of all is it is deliciously crunchy! The crunch factor is actually my favourite part! And for those of you with a gluten intolerance, this granola is gluten free as well!

I could go on and on about how good this quinoa granola is, but I will spare you. It is however going to become a regular item for my breakfast as I’m about to run out and just the though of it makes me a little sad. Anyway if you haven’t seen my Instagram page, I have been serving this with banana, peanut butter, a little yoghurt and a drizzle of honey! Perfect!

Ingredients
makes 4 cups

1 cup quinoa
1/2 cup buckwheat groats
1/2 cup pumpkin, sunflower and flax seeds combined
1/2 cup desiccated coconut
2 tsp cinnamon
4 tsp honey
1/2 cup olive oil

Equipment
baking tray
mixing bowls
measuring cups/spoons
wooden spoon

Suggestions/Variations
You can use coconut oil in place of the olive oil if you prefer. 

I rinsed the quinoa before using.

Method
Preheat oven to 100°c. Line a tray with baking paper. 

In a bowl, mix the quinoa, buckwheat, seeds, coconut and cinnamon until combined. 

In a small bowl, add the olive oil and honey and and stir together. Pour into the quinoa mixture and stir with a wooden spoon to combine thoroughly. 

Spread evenly on the baking tray and place in the oven for 15-20 minutes or until a light golden brown, ensuring to stir the mixture halfway through. Leave in the oven to cool and then store in an airtight container or jar!
